Whisk together broth, garlic, and olive oil.
In a large bowl, combine wheat gluten, chickpea flour, nutritional yeast, thyme, paprika, poultry seasoning, and salt.
Form a well in center of dry ingredients and add broth mixture. Stir well until dough leaves side of bowl. Knead dough for 3-5 minutes to develop gluten.
Leave dough to rest for 10 minutes.
Meanwhile, bring a steamer pot of water to boil.
Cut dough into four equal pieces. Place pieces in steamer part of pot and steam for 30 minutes.
Cut into steaks and serve with your favorite gravy.
