1 teaspoon of minced garlic
1 inch piece of fresh ginger (peel the skin with a spoon)
1/2 cup of soy sauce
1/2 cup of sugar
2 tablespoons of mirin or sherry or dry white cooking wine (I use Sherry)
1 teaspoon corn starch
1/2 teaspoon of red pepper flakes
First, start by heating up your frying pan to medium-high heat (7) while you prepare your sauce. For your sauce, get a mixing bowl. Start by adding the sugar, corn starch, soy sauce, minced garlic (I use the kind in a jar), and Red Pepper flakes. Now take your ginger root and peel off the skin using a spoon. Once you have removed all the skin, use a cheese grater and grate the ginger into the mixing bowl. Use a whisk to mix up your sauce. Poor all of your mixing bowl contents into a large ziploc bag. Now wash your chicken thighs, shake off the excess water and put all of the chicken in the ziploc bag containing the sauce. Give it a good shake-a-roo to coat the chicken nicely. Add the chicken to your pan with the skin side down. Get a pot and fill it about halfway up with water and place that on top of your chicken thighs to weigh them down. Cook the chicken for 15 -20 minutes like this (this depends on the thickness/size of your chicken) and remove the pot and cook for an additional 10 minutes on MEDIUM (5) heat. Simmer on LOW (1) heat for 2-3 minutes and the sauce should be thick/glossy and should coat the chicken well. By far the best chicken teriyaki dish I've ever had. Enjoy!
