A comforting staple of mid-20th century cuisine, realized here with extra flavor and fewer calories. Lots of tasty ingredients equal delicious results!
1. In large saucepan or skillet heat the olive oil. Add thyme to season but don't burn.
2. Add the onion and bell peppers, cook till translucent about 5 minutes on medium high.
3. Add salt, black pepper, and chicken. Combine thoroughly and cook until chicken no longer pink. Reduce heat to medium.
4. Add the flour (optional), stir thoroughly.
5. Add the vegetable stock. Stir in thoroughly. Add more if you feel necessary.
6. Add paprika, mushrooms, pimiento, peas, stir thoroughly and cook for another 5 minutes.
7. Add 1/3 cup parmesan cheese, stir thoroughly. Let mixture sit now for 20-30 minutes off the burner for the flavors to combine.
8. In a separate pot, cook fettuccine until al dente according to package.
9. Drain, then add fettuccine to main skillet with chicken mixture. Add rest of cheese. Stir and heat for about 10 minutes on medium.
10. Serve immediately to cheers and compliments.
