Pre- cook oven at 350
Cook 2 large chicken breasts (I parboiled mine) after cooked cut or tear in bite sized chunks. it is ok if it is still slightly pink in the middle. It will cook the rest of the way in the oven.
Boil 1 pkg spaghetti or thin spaghetti (whole wheat noodles work) boil pasta until al dente and drain. Do not overcook the pasta because it will get mushy after baking.
Combine in saucepan:
-about 1/4 cup of cooking wine or lemon
-about 1/2 cup of sliced mushrooms (I used baby Bella mushrooms)
- 1 can cream of mushroom soup
- 1/2 a soup can of 2% milk or lower in fat
- 1 8 oz block of 2% milk cheddar cheese (I used Cracker Barrel brand)
- 4 tbsp of light land-o-lakes butter
Let come to a low boil and continue to mix throughout. Add pinches of flour to the rue until the cheese has melted and you make a thick cheese sauce.
In a casserole pan pour in pasta
Next evenly distribute the cooked and chopped chicken. The chicken stays more moist if you cook it until it is slightly pink inside before you tear or chop it.
Next add the cheese sauce rue that you made and evenly distribute.
Cover with foil and cook at 350 for 30 mins and then remove foil and cook an additional 15 minutes.
