Combine all the spices in a small bowl Place all the chicken pieces in s mixing bowl with the yoghurt, lemon juice and half of the spice mix. Cover and leave to marinade for an hour or overnight or for 2 days
Step 2
Preheat the oven to grill to high. Line a roasting or oven tray with foil.
Step 3
Hear the butter or oil in a frying pan over a medium heat. Add the onion and cook, stirring for 15 mins till soft and turning golden. Add the garlic and ginger and cook for another couple of mins. Sprinkle in the remaining spice mix and stir for a min - you may need a bit more butter or oil if it’s looking but dry
Step 4
Add the stock, tomatoes, coconut milk, brown sugar, cinnamon stick and bay leaf (if using) and stir to combine. Simmer over a medium heat until reduced by 1/2 and thickened to a curry sauce consistency, 20-30 mins. Turn off the heat
Step 5
Arrange the chicken pieces (not touching) on lined tray, grill near top of the oven for 10-15 mins or till starting to blacken and sizzle on top. Don’t worry about turning the chicken over - just transfer it to sauce and simmer for few mins until heated and chicken is cooked through
Step 6
If sauce is too thick, you can thin it down with more stock or water. Taste the sauce and season with salt and pepper if needed
Step 7
Serve the chicken and sauce over cooked basmati rice. Sprinkle with fresh herbs and coconut toasted lightly in a pan and for with a little yoghurt if you like. Accompany with naan or fried wraps
Step 8
Keep covered in fridge for few days or in freezer for up to 6 months
