For the marinade, blend all the ingredients together in a food processor until smooth. Salt to taste.
Put the chicken cubes in a bowl with the marinade and mix thoroughly. Cover and marinate overnight in fridge.
Heat the oven to 400. Thread chicken onto skewers and place on a metal rack set in a rimmed cookie sheet. Roast, uncovered, 15-20 minutes, until chicken is cooked through and browned around the edges. Serve with lemon wedges.
