Tortilla soup with a creamy soup base, black beans, tomatos, peppers and a pulled meat of your choice. Great way to use up leftover chicken/turkey/carnitas
Soup Base:
Melt 1/2 Cup Butter in a large pot
Remove from heat and WHISK in 1/2 Cup Flour
Slowly whisk in 1 Can of Chicken Broth
GRADUALLY Whisk in 2 Cans of Enchilada Sauce and 2 Cans (fill up the sauce cans) of Milk or Half and Half
Bring to a boil, stirring CONSTANTLY.
Turn off burner and continue to stir for at least a minute.
Soup Preparation:
Add to base the following:
2 Cans Black Beans (Well Rinsed and Drained)
2 Cans Petite Diced Stewed Tomatoes (Well Rinsed and Drained) ALT: Rotel
1 Can Chopped Green Chillies
Frozen Corn to taste
Pulled meat (all you can fit)
A heavy dash of Paprika
1/2 Teaspoon Ground Cayenne Pepper
