spray slow cooker with cooking spray. heat oil in nonstick skillet; add chicken, sprinkle with salt and pepper. cook 4 minutes, turning once. Add chicken and rest of ingredients to slow cooker. cook on low for 4 hours. shred chicken and add cilantro and cook 30 more minutes.
serve with crushed tortilla chips, shredded cheese, sour cream and avocado
