A simple, easy lunch that can replace boring old peanut butter and jelly. You can substitute turkey for the chicken, or leave out the chicken and increase the veggies to make it vegetarian.
Saute the mushrooms and onions in the butter quickly over medium high heat; add chicken and continue to cook just until all ingredients are heated. Warm tortillas and fill each with one quarter of the chicken and vegetable mixture. Add a sprinkle of cheese and slices of avocado. Top with sour cream and hot sauce if desired. Fold up wrap and serve warm.
