Prepare while rice according to package instructions.
Saute onions in . Combine flour, salt & pepper
The 2 cups of liquid can be a combo of chix broth, milk, white wine or add a little white wine to the combo - combine all above with 1/2 c pimento & 1/2c parsley
Combine rice & sauce w/ 1/3 or ½ c parsley or pimento (or ½ of each)
Add olives (optional) and chicken.
Either mix in the slivered or sliced almonds or use sliced almonds on the top so you can decide whether to place across entire casserole
Mix and bake in 2 qt casserole. Bake @ 350(F) for 30 minutes.
May be prepared ahead & baked later.
Add your liquids slowly so it doesn't end up too liquidy
