A deliciously delicate North African dish.
Soak the whole dried figs in a little warm water for two hours
Remove the figs from the water, (keep it), remove stem and cut into quarters
In a heavy pan fry the Chicken in the oil till browned
Remove the Chicken and add the Onion/Garlic and fry until light brown
Add the Chicken Stock/Lemon Peel/half the Lemon Juice/1 tablespoon Coriander
Bring to the boil and add the Chicken/Dried Figs/Raisins
Reduce heat, cover and simmer until Chicken is tender, (about 30 minutes)
Remove the Chicken, cover and keep warm
Mix the Flour with the Fig Water, (mix well)
Add to the Fig/Raisin Sauce and stir briskly
Add Salt/White Pepper to suite your taste
Bring to the boil then reduce heat and simmer for 2 minutes, stirring regularly
Serve the Chicken on warmed plates
Spoon over the Sauce
Sprinkle with Fresh Coriander
Garnish with Fresh Fig slices
