Yummy chicken, baked in the oven.
Preheat the oven to 225 C. Squeeze the juice from two oranges (about 2 dl). Whip half of the juice (1 dl) with 2 T soy sauce and 2 dashes of black pepper. Spread out the thigh filets. Slice the goat cheese in as many slices as you have chicken thighs. Place the goat cheese on the chicken thighs. Sprinkle with thyme. Fold up the chicken filets around the cheese and wrap with 1/2 -1 slice of prosciutto. Place in a baking pan. Pour over soy mixture and bake for 25 minutes.
When chicken is done, remove to a covered dish. Pour the sauce from the baking pan into a frying pan, add the rest of the orange juice and 2 dl crème fraiche. Simmer sauce for 5 minutes.
Slice each chicken package and serve with sauce.
Goes great with rice/grain and stir-fried veggies.
