Suggest a better description1. Flatten chicken to 1/4 in. thickness.
2. In a shallow bowl, combine:
8 Tbs. of Flour
Parmesan Cheese
1 tsp. salt
1/2 tsp. pepper.
In another bowl:
beat eggs
Dip Chicken into eggs and then coat with flour mixture butter
3. In large skillet, cook chicken in 2 Tbs .and oil over medium heat for 3-5 minutes on each side or until juices run clear.
Remove and keep warm.
4. in a small bowl, combine:
2 Tbs Flour
1/2 tsp. Salt
1/4 tsp. Pepper
Stir in broth until smooth
5. In Skillet (same one that was used for cooking chicken), Add:
Apple Juice (Stir to loosen any browned bits)
Stir in Broth mixture
Bring to a boil; cook and stir for 1-2 min. or until thickened.
6. Stir in Lemon Juice; cook for 1 min.
Add parsley and remaining butter; cook and Stir until butter is melted.
Serve over Chicken
