Whisk vinegar, orange juice, sugar, ketchup and cornstarch together.
Cut chicken into small chunks and cook with oil until no longer pink. Transfer to bowl
Add oil to pan and cook onion. Add the pineapple and cook one min. Stir in garlic and ginger and cook for a minute. Add vinegar mixture and stir. Add chicken and mix. Add scallions
Serve with the cooked rice
