Preheat oven to 400 degrees.
Brown chicken thighs in 2 T of smart balance in oven proof pan, salt and pepper to taste. Remove from pan, discard fat, melt 1 T smart balance and saute garlic, then add chicken broth, heavy cream, herbs and sun dried tomatoes. Add chicken breasts back to pan and spoon sauce over. Place pan in oven and bake for 25 min. Serve over sauteed spinach.
