In a large oven safe pot: on stove top heat margarine, olive oil and garlic
Once bubbly reduce to medium heat and add chicken skin side face down.
In a separate skillet caramelize onions
After 5 minutes turn chicken to other side for 5 minutes or until you see chicken it 90% cooked.
Remove chicken from pot and discard most of the fat/oil/margarine
Add caramelized onions + Gold's jar of sweet and sour sauce
Add chicken and sprinkle with all the seasoning/herbs
Cover and put in oven for 15 min or longer
5 minutes before serving, remove cover and broil so chicken gets nice colour
I served this on a bed of fresh baby spinach leaves (uncooked)-Kids loved it
