1. preheat oven to 200 degrees
2. Mix 1/2 tsp salt and pepper in a small dish. Rub each breast with salt mix. Dredge breasts in flour.
3. Heat oil in nonstick pan. Cook for four minutes per side until browned. Put in pan and put in oven. Add mushroom and shallots . Saute until tender about 5 minutes, stirring often. Add cognac and wine raise heat to high, and saute for 3 minutes, until liquid is reduced to half.
4. Add broth, thyme, and remaining 1/4 teaspoon salt, then bring it to boil for five minutes. Whisk in water and cornstarch mix for 1 minute. Serve over chicken breast.
