Suggest a better descriptionRinse and drain chickpeas. Pat very dry with paper towels discarding any loose skins.
On a large rimmed baking sheet, toss with olive oil, salt and pepper.
Roast at 425 degrees for 30 minutes until crisp shaking occasionally
Remove from oven and transfer to bowl; toss with seasonings:
Honey sesame: toss roasted chickpeas in 2 T Honey; 1 T each of sesame oil, sesame seeds, and sugar; and 1/2 teaspoon each of garlic powder and 5 spice powder. Return to oven for 5 minutes till caramelized and crisp.
BBQ: Toss roasted chickpeas in 1 teaspoon dark brown sugar and 1/2 teaspoon each of ground cumin, smoked paprika, garlic powder and chili powder.
Maple-cinnamon: Toss roasted chickpeas in 2 T maple syrup, 2 teaspoons Sugar, 1 teaspoon ground cinnamon and 1/4 teaspoon ground nutmeg. Return to oven for 5 minutes until caramelized and crisp.
