There is a restaurant in my home town called "Cooks Truck Stop" (New Mexico) that is known for its chile con queso. Ingredients are; I know, cream of chicken soup? Yes, cream of chicken soup. Mix the above ingredients together in a saucepan and gently heat until the cheese is melted and the ingredients are well mixed. Eat it with chips or use it as thick enchillada sauce.
