In a large bowl, using an electric mixer on medium speed, beat eggs until pale yellow and doubled in volume. Toss Cheddar and Monterrey Jack with flour then add to eggs. Add remaining ingredients and beat until just combined.
Pour mixture into baking dish and bake for 35 to 40 minutes or until center is firm.
**Add meat: Toss in leftover bacon or ham into mixture before baking.
