Cook pork in crock pot overnight. (I have found it makes a lot of juice so if you precook you can take some of it out before adding the other ingredients, you could also do this during the day and add the other ingredients and turn to high for about 4 hours or so, enough to get the onions done)
In the morning, add other ingredients to crock pot and let cook all day.
Serve with cheese, tortillas and sour cream.
