Slow cooker: add pork, tomatoes with juice and all ingredients. Cook on Hugh for 4 hrs or low for 6. Shred pork and put back in juice. Skim off fat if needed. Serve on tortillas. Top with guacamole, sour cream and/or quest fresco as desired.
