Brown ground beef. Rinse, drain and set aside. In a large soup pot, combine all ingredients except noodles, cheddar cheese, sour cream and crackers. Simmer until vegetables are tender, adding water if needed. Add optional noodles, or serve along side. Top with chedder cheese, optional sour cream and oyster crackers to taste.
