This is my rendition of a bowl of chili I discovered in North Kansas City. Unique and SOOOO good.
Add beef to a dutch oven along with 1/2 cup of water. Breakup beef as it heats; allow to cook for 20 minutes adding water as necessary. Add the next seven ingredients along with more water if necessary (water should never completely immerse beef). Bring to a boil and simmer on low for one hour, stirring often. Continue to add water as needed until the last 10 minutes...then allow it to boil off until there's just a little in the bottom.
Add beans to a bowl, don't need to be heated. Top with plenty of seasoned beef. Top that with chopped onions and cider vinegar to taste. Serve
The kicker with this recipe is the cider vinegar. Seems like it would be too sour but it mellows out with the spiciness of the beef. I eat it without crackers since I'm on a low-glycemic diet, but it's good with crackers and cheese.
