Add onion, garlic, celery and cook 10 minutes.
Add all remaining ingrediance and simmer for 2 hours, adjust seasons as desired.
It is best to cool the chili down and reheat the next day.
Serve hot chili in a bowl topped with sour cream and grated monterrey jack. Enjoy with Frito's corn chips.
