Brown beef in oil, along with chili powders, and cumin. Put beef aside to drain.
Add onions to fat remaining in the pot and cook until not wet. Add garlic and cook another 1 minute. Add remaining ingredieants (tomatoes, worchesterchise, cocoa, cayenne and salt, including beans if using). Simmer for at least 11/2 hours.
Can use 6 T. chili powder if do not have ancho chili powder.
I used one can of 28 oz crushed tomatoes plus 14oz, or 1-26oz Pomi box strained tomatoes and 1-26oz Pomi box chopped tomatoes I drain beef in a paper towel lined colander that is place over a place or bowl to catch excess fat.
