My recipe adopted from my mother's and William's Sonoma.
In a large saucepan over medium-high heat, warm the oil and brown the meat. Drain the meat in a colander. In the same pan, over medium heat, melt the butter & saute garlic, peppers, and onion about 3 minutes. Return meat to pan, Add oregano, cumin, paprika, chili powder, and tomatoes. Mix well. Bring to a boil. Rinse and drain the beans. Reduce heat to medium-low and add beans. Cover and simmer, stirring often until it thickens, about 25 minutes. Add salt and pepper to taste. Spoon into large serving bowls and add toppings.
STUFF YOU CAN ADD WHILE COOKING:
* Chili peppers or jalapenos
* Red pepper or hot sauce
STUFF YOU CAN SERVE IT WITH:
* Shredded cheese (Mexican blend or cheddar)
* Chopped onion
* Fritos
* Crusty bread
If you use stew meat, cut the stew chunks into bite sized pieces. (I like stew meat, but ground is a definite time saver.)
If you use whole tomatoes, cut into small pieces. Save all the liquid. (I think that whole tomatoes taste better, but using diced is a definite time-saver.)
If you need to keep it warm for a while, don't add the beans, salt, and pepper until about 20 minutes before you serve.
To make this super healthy, use broth (beef, chicken or vegetable) to brown the meat and to saute the vegetables and cut down or omit the cheese. For SHAPE. also omit the beans (and bread and Fritos, of course).
