Rich, Creamy and a little spicy
Melt butter, add onions, jalapeƱos. Cook until onions are translucent, about 5 min. Add garlic and cook 30 sec. Add flour and cook, stirring for 1 minute.
Add 1//2 and 1/2. Bring to simmer and cook until thickened. Turn down heat and add the grated cheese, whisking and letting it melt as you go, until all of the cheese is incorporated. Add the cumin, salt and tomatoes. Taste and adjust seasoning if necessary, for more heat, add red pepper flakes. If too thick, thin with milk.
