Unlike most of my recipes, this one uses a store bought mix but it is low sodium if you don't use the tomato juice in the recipe (mix has 40mg of sodium per serving). It is also very good and different than my own chili mix. It uses the Spicy Blue Ribbon Chili Mix from The Fresh Market
Sort and wash beans. Soak in water 2 inches over the beans for 4 hours or overnight. OR bring beans to a rolling boil, turn off heat and soak for 1 hour.
Drain and rinse, place beans in a 4qt or larger pot. Add the 5 cups of water, cover, bring to a boil and simmer for 1 hour.l
In a large skillet, heat 1 tablespoon of olive oil to sear the stew beef chunks for about 5 min, add the ground chuck and cook until it is browned. Add the meat to the bean mixture. Return skillet to the heat and add the other tablespoon of oil, saute the peppesr and onion until soft, then add the garlic for about 1 minute.
Add the vegetables to the beans and meat, mix in the tomatoes and juice, spice packet, tomato paste and tomato juice/water. Stir and bring to a boil, cover and reduce heat to a simmer for 1 1/2 hours.
Add jalapenos for heat or add at the end to to heat up just a little.
