Brown ground chuck with onion and pepper. (Ground beef is fine. Chuck is better and the better flavor, but is more expensive.)
Tomatoes in the blender. I like the texture smooth. Add all the ingredients in large pot. Combine well. Drain the ground chuck/onion/pepper and add to the pot. Chili, red pepper flakes & hot sauce to taste.
Simmer at least 2 hours for all flavors to combine. Serve with corn muffins, with cheese & onion if desired.
Omit peppers if they cause heartburn. Garlic - I don't measure really, I just put a pile in. Carrots are optional, they take some of the acidity out of the tomatoes.
