Suggest a better descriptionCombine in a shallow dish, eggs & 2 Tbls. liquid from oranges, reserving fruit for sauce. Combine in another shallow dish, bread crumbs, salt & lemon rind. Dip fish into egg mixture, then roll in crumb mixture; place on wire rack to dry slightly. Pour butter in 10*15" baking dish; place fish in dish, turning to coat both sides with butter.
