Braised mushrooms and oysters with fat choy (hair vegetable) is a Chinese New Year staple during the Reunion Dinner.
Washing and soaking
Mushrooms:
- Soak dried mushrooms to rehydrate with hot water for one hour.
- Drain and squeeze out water.
- Soak mushrooms with warm water overnight (min 8 hours).
Oysters:
- Before the next step, wash oysters with warm water.
Fat Choy
- About an hour before serving, soak to rehydrate.
- Shake out in water to separate fat choy from sand and dust.
- Pick out bunches to separate from sand and dust.
- Discard water.
- Soak in water to wash again.
Braising
- Put mushrooms and oysters in pot (2 or 3 litre).
- Add water that was used for soaking mushrooms -- just at the level of the mushrooms and oysters. (Do not discard this soaking water)
- Bring to boil.
- Boil at medium heat for about 0.5 hours.
- Turn down and simmer for the next 3 to 5 hours.
- Add water that was used for soaking mushrooms as needed.
- Add oyster sauce, and light and dark soy sauces, and sugar.
- Simmer for another 15 minutes.
- Turn off and let stand overnight (min 8 hours) to soak in the sauces.
Serving
- About 0.5 hour before serving, reheat to boiling.
- Add fat choy in small bunches to the pot.
- Boil in medium heat for about 15 min.
- Serve on a bed of lettuce.
May substitute oysters with dried scallops (4 medium-sized)
Cook with high-grade dried shitake 'flower' mushrooms, if avaiable.
