Put leftover chicken to excellent use in this tangy, creamy chicken salad. It tastes great served over a bed of mixed salad leaves or in a lettuce cup - from Weight Watchers
Combine mayonnaise, soy sauce and ginger in a large bowl. Whisk until blended. Season to taste with salt and pepper and set aside.
In a separate bowl, combine chicken, snow peas, capsicum, carrots and shallots. Toss to combine, then add mayonnaise and toss to coat. Serve immediately in lettuce cups or cover and refrigerate for up to a day.
