Combine the beef, soy, cornstarch, and 1/2 teaspoon of salt. Mix, then mix in 2 teaspoons of peanut oil.
Heat 1 tablespoon peanut oil in a wok and stir fry the bell pepper for one minute. Add the onion and fry one more minute. Remove to a plate.
Heat 1 tablespoon peanut oil and fry the beef.
Add back the bell pepper and onion along with the Calypso Sauce and 1/2 teaspoon of salt.
Heat through and serve over warm rice.
