Suggest a better descriptionMix the mayo and chipotle pepper. Make carmelized onions (takes 20-30 min. to cook). While onions cook slice the cheese and cook the bacon. Heat a grill pan or cast-iron skillet over medium heat. Season the ground beef with salt and pepper; form into small patties; being careful not to over work the meat (which will create dense, chewy patties). Use thumb to create a small hole in center of each patty. When the pan is hot, add the burger and cook for 3 minutes on the first side, then flip. Add the cheese to the cooked side and continue grilling for another 2 to 3 minutes, until the patties are firm and the cheese has begun to melt. Toast rolls in oven.
