Suggest a better descriptionPreheat oven to 350 degrees F. Coat a foil-lined baking pan with cooking spray.
In a large mixing bowl combine 1/3 cup salsa, the egg product, rice, cilantro, and salt; add ground beef and mix well. Shape into an oval loaf (about 8 inch long by 5 inches wide). Place in prepared pan. Bake, uncovered, for 40 to 45 minutes or until an instant read thermometer registers 160 degrees F.
Spoon remaining 1/3 cup salsa atop meatloaf. Let stand 10 minutes before slicing.
