Chevy's recipe; this is used to add the smoky, earthy-spice flavors.
Combine all the ingredients in a saucepan over high heat. Bring the mixture to a boil, decrease heat to medium-low and simmer for 30-45 minutes. Puree the mixture in a blender or food processor until smooth. Store in an air-tight container in the refrigerator until ready to use or for up to 3 days.
You can prepare more easily: Buy a can of high-quality chipotles en adobo (puree in blender).
