2. Peel bananas and mash well in mixer.
3. Mix in brown sugar.
4. Melt coconut oil 30 seconds in large mug in microwave.
5. Add milk to coconut oil and microwave 30 more seconds.
6. Using Emerson blender, mix oil and milk until blended well.
7. Add eggs one at a time to oil/milk mixture and blend until creamy.
8. Blend mixture slowly into banana batter slowly until combined.
9. Add dry ingredients in separate bowl and whisk until incorporated. 10. Slowly add dry ingredients to wet and blend slowly until incorporated.
11. Portion into waffle iron using heaping 1/4 cup of batter.
12. Bake according to waffle irons directions.
13. Cool on wire rack and serve or store in freezer to toast later!
