Really easy, no baking involved, yummy cake for Any occassion. Choose how big you want a cake to be which will change how many ingredients you need.
Put the cream, sugar, chocolate & cocoa and rum in a pan and slowly heat up, stirring constantly until well mixed but NOT bringing to boil. Put in a big enough bowl to be able to whip up the mixture later and put in a freezer, uncovered for about 2 hours.
Get the base for the cake, either a plate, tray etc. In a shallow bowl make up a weak cold black coffee. Whip up the cream mixture to the usual firm whipped cream consistency. Dunk the biscuts in the coffee and assemble on the cake base to your chosen size. Don't leave the biscuits in the coffee for too long as they will fall apart. Spread the whipped cream mixture over in a thin layer and keep repeating the process until you have the size of the cake you want. You can easily push the cake into shape when you have assembled the last, top layer of biscuits and then spread the remaining cream all over and around the cake. Decorate with whatever you fancy:) Keep in the fridge, easily lasts a week or more. To serve cut slices, really tasty with some fresh strawberies, or/and plain whipped cream.
***The above ingredients will make a smaller cake, 4 biscuits per layer and about 8 high. Simply increase the quantity of the ingredients if you need a bigger cake. The same applies to how chocolatey or sweet you like the cake to be.
