Preheat oven to 350°. Spray a 9-inch square baking pan with nonstick cooking spray.
Prepare brownie mix according to package directions, adding chopped pistachios. Bake for 25 minutes (brownies will be soft). Let cool completely.
Trim hard edges from brownies, and discard edges. Roll remaining brownies into 1-inch balls. Place on an ungreased baking sheet, and freeze for 1 hour.
Line a baking sheet with parchment paper.
In a large bowl, place melted candy coating. Using 2 forks, dip brownies into candy coating, covering completely. Tap off excess candy coating. Place on prepared baking sheet. Garnish with chopped pistachios, if desired. Let stand for 30 minutes, or until set.
