Suggest a better description1. Cut the butter into cubes and put in a medium bowl. Break the dark chocolate into small pieces and put them in the bowl.
2. Fill a pan with water and then melt the butter and chocolate stirring occasionally to mix them.
3. Leave the mixture to cool and while you wait turn the oven on to 180C/ 160C.
4. Using a shallow square tin put down some non stick parchment.
5. Sieve the flour and Coco powder into a bowl to get rid of any lumps.
6. Chop up the white and milk chocolate into chunks.
7. Break the eggs into a bowl and then add the caster sugar. Then whisk the eggs and sugar until it is thick and creamy. It will be done when the mixture becomes pale and about double its size.
8. Add the cooked chocolate to the egg mixture then gently fold with a rubber spatula. Try not to knock out the air so be as gentle and slow as you like.
9. Sieve in the cocoa and flour into the egg mixture and then mix them in together. It will not look great at first but keep going until it looks fudgy. But try to not overdo this step.
10. Finally stir in the chocolate pieces until they are evenly spread.
11. Pour the mixture into the tin and use the spatula to level the mix and push it into the corners.
12. Put it in the oven for 25 mins. Shake the tin. If the middle wobbles put it back in for another 5 mins. When the top becomes papery and the sides start coming away take it out.
13. Leave the tin until it is cold and then remove the brownie cutting it into quarters and then the quarters into triangles.
