Chocolate Nut Cake:
1. Preheat oven to 350. Grease 8x10 in pan.
2. Mix sugar, eggs, and butter in large bowl with whisk or mixer until just combined.
3. Melt chocolate in double boiler/microwave. Cool slightly and add to butter mixture. Add nuts.
4. Pour into pan and bake until set, but not dry-- about 30 min. Cool to room temp.
Whipped Milk Chocolate Ganache:
1. Heat 300 grams cream in small pot until simmering.
2. In medium bowl, pour hot cream over the chocolate. Wait a few min and stir until smooth. Refrigerate at least 4 hours.
3. Remove from fridge and add remaining cream. Whip until light (don't over-whip, as ganache can split).
4. Pour ganache over cake and smooth with spatula. Refrigerate until firm.
Coffee Mascarpone Cream:
1. Heat cream until simmering
2. Pour cream over chocolate and mix until smooth. Refrigerate 1 hour
3. Combine chocolate mix, mascarpone, and coffee paste. Refrigerate 2 hours
4. Remove from fridge and whip until stiff peaks form.
5. Spread and smooth over ganache layer on cake. Refrigerate until firm.
Dark Chocolate Coffee Ganache:
1. Combine cream and coffee and heat until simmering.
2. Pour cream over chocolate and stir until smooth. (gently to avoid air bubbles)
3. Cool slightly, but pour over cake while it is still liquid. Tilt pan to cover or use spatula to smooth and make designs.
4. Refrigerate a few hours before serving.
