Line the bottom and 2 sides of a 9-in. square baking pan with a strip of foil that overlaps the sides; grease the foil and pan sides and set aside.
In a large bowl, combine the first five ingredients. Cut in butter until fine crumbs form. Separate one egg and add the egg yolk to the flour mixture (save the white for the topping.) Add 1 tsp. vanilla and finely chopped walnuts. Mix well and turn into the bottom of pan. Press firmly to even out the mix. Bake at 325? for 15 minutes.
In a small mixing bowl, beat cream cheese and 1/3 cup of sugar until smooth. Beat in the sour cream, 1 tbs. flour, ? tsp. salt and the orange peel. Beat in the whole egg, the reserved egg white and vanilla on low speed just until combined.
Remove the baking pan from the oven and pour the filling over the warm crust. Bake for 20-25 minutes or until center is almost set. Cool in the pan on a wire rack for 1 hour, then garnish the top with chocolate sprinkles or chocolate curls if desired. Refrigerate overnight. Lift out of the pan by holding onto the foil, then remove the foil. Cut into 1-in. squares. Yield: 25 servings.
