Suggest a better description1. Heat oven to 200°C/180°C fan/gas mark 6. Line to muffin trays with paper muffin cases. In a large bowl beat the eggs lightly with a handheld electric mixer for one minute.
2. I thought oil and milk and beat until just combined then add the sugar and whisk until you have a smooth batter. Sift in the flour and salt, then mix in till just smooth. Be careful not to over – mix the butter. Stir in the chocolate chips.
3. You muffin cases two thirds full and bake for 20 to 25 minutes, until risen and firm to the touch, and a skewer inserted into the middle comes out clean.
4. Leave the muffins in the tin to cool, then transfer to a wire rack to cool completely.
