1. Beat yolks with sugar and set aside.
2. Heat cream to a simmer. Remove from heat and add chocolate. Stir until smooth.
3. Slowly whisk chocolate mixture into eggs.
4. Fill ramekins with 5oz of mixture. Cook at 275F in a wet AltoShaam until done, 1-1 1/2 hours.
5. Chill well.
