Delicious Chocolate Ganache Tarts
Sweet Pastry
Method
1. In a large mixing bowl combine all dry ingredients. Using your fingers rub through cooled, cubed butter until the mixture resembles breadcrumbs.
2. Add the egg yolks and milk by hand until combined.
3. Wrap mixture in cling-wrap and refrigerate for at least 30mins.
4. Sprinkle plain flour over bench and add dough mixture, roll out to desired thickness (prefer as thin as possible).
5. Pre-heat oven to 180 degrees
5. Grease tart moulds and press dough into each mould with enough hanging over the edges to get an even tart once cut off. Next line with baking paper and fill each one with rice or beans or baking weights.
6. Place in oven and bake for 20-25mins, until golden and cooked through.
7. Remove from the oven and cool.
Chocolate Ganache Filling
Method
1. In a medium-large heat proof mixing bowl add the dark cooking chocolate.
2. In a small saucepan bring the cream (or cream and water) to a simmer (almost a boil), then add to the chocolate and whisk until mixture is smooth and melted through.
3. Pour chocolate into pastry cases.
Lavender Cream
Method
1. Place the thickened cream in a medium-large mixing bowl and beat with an electric beater until you form soft peaks.
2. Fold through the dried lavender and serve on or with the cooled tarts.
3. Sprinkle with roasted flaked almonds and fruit
