Very pretty for fall-good with just ganache
1. Preheat oven to 350?. Grease and flour 2 9 x 1 1/2 in round baking pans; set aside.
2. In an exgtra large bowl combine buttermilk, water, oil, sugar, eggs, soda, and salt. Using wire whisk, whisk until well combined. Add flour and cocoa powder; whick until smooth. Divide batter between prepared pans.
3. Bake for 30-35 min until top springs back when lightly touched in center. Cool in pans on wire rack for 20 min. Remove from pans and cool completely.
4. In a med bowl whisk together cream cheese, punpkin, sugar, and cinnamon until thickened. Place one layer on plate. Spread filling over top. Top w/ second cake layer.
In a saucepan bring whipping cream just to boiling over med high heat. Remove from heat. Add chocolate (do not stir). Let stand 5 min. Stir until smooth. Cool 15 min or until slightly thickened. Pour over cake, alloweing glaze to drip down sides. Chill until set, about 30 min. Top w/desired toppers (pecans, Blackberries or raspberries, toasted hazelnuts).
Can double ganache to replace cream filling-1/2 in middlle, 1/2 on top
