Preheat oven to 375 degrees.
Lightly butter 6 (3/4 cup) ramekins.
Combine chocolate and butter in a large glass bowl and melt in microwave on HIGH for 1 minute. Stir and melt 30 - 60 seconds longer, stir until smooth. Cool slightly.
Beat eggs, egg yolks, and sugar with mixer until slightly thickened, about 5 minutes. Add flour and beat until blended. Add chocolate mixture, extract, and salt. Beat until just incorporated.
Divide batter among prepared ramekins and place ramekins on baking sheet. (Can be prepared up to 1 hour ahead. Let stand at room temperature).
Bake cakes until edges are set but centers look shiny and still move slightly when shaken (tester will come out with wet batter attached) about 11 minutes. Remove cakes from oven and run a small knife around each cake to loosen.
Place small plate on top of each ramekin and using a pot holder invert the cake onto the plate. Repeat with remaining cakes and sprinkle each with powdered sugar. Place a scoop of ice cream alongside and serve immediately.
