No one ever knows there is tofu in this!
Place melted chocolate chips and tofu into food processor and process until smooth (2 mins).
Place salt and egg whites in a medium bowl and beat on high speed until stiff peaks form.
Combine sugar and water in a small saucepan. Bring to a boil and cook (without stirring) until a candy thermometer registers 238 degrees F.
Pour hot syrup in a thin stream over the egg whites, beating at high speed. Gently stir in 1/4 of the meringue into tofu mixture (temper); Gently fold in the remaining meringue.
Spoon 1/2 cup of the mousse into custard cups. Cover and chill at least 4 hours.
Garnish with whipped topping or grated chocolate.
