Wonderfully rich and traditional.
Melt chocolate over a double boiler until smooth.
Beat egg yolks with sugar and beat until the texture forms a light froth, then add melted chocolate and put aside.
In a separate bowl beat the egg whites until they form stiff peaks.
Whip the cream until stiff and then fold the cream into the chocolate-egg mixture until there is not a trace of white streaks remaining.
Carefully fold the egg whites into mixture and gently blend the ingredients together. Then pour mousse into glasses and refrigerate for at least one hour.
